Boneless cuts may be available at your grocer, but they are likely more expensive.
  • Chili powder - Use chipotle powder for spicy pulled pork.
  • Garlic powder
  • Salt - Use Kosher salt or sea salt.
  • Black pepper
  • Cooking oil - A high-heat oil is needed to sear the pork shoulder before slow cooking.
  • Chicken broth - Or preferred cooking liquid.

How to make pulled pork in a slow cooker

First, pat the pork shoulder dry with paper towels. Cut the mass into smaller pieces for easier handling and trim excess fat, if desired. Then, season the pork on all sides.

Next, I prefer to sear pork shoulder before adding it to the slow cooker because it adds even more umami flavor to pulled pork. You can skip this step and move straight to the slow cooker instructions.

Once seared, transfer it from the skillet into the cooker, along with most of the broth. Use the remaining broth to deglaze the skillet, then add this liquid gold to the cooker.

Slow-cook the pork shoulder for 6 to 8 hours. It should be fall-apart tender and easy to shred. You can shred it right in the slow cooker or a serving dish, as I did in the photo below.

  • 3 pounds Pork Shoulder or Butt (boneless or bone-in) netting removed
  • 1 tablespoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Sea Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoons Vegetable Oil
  • 3 cups Chicken Broth or other cooking liquid

Instructions

  • Prep: Pat PORK SHOULDER dry with paper towels to remove excess moisture. Trim excess fat, if desired. You may wish to cut it into smaller chunks for easier handling, but it's not required.

  • Pork seasoning: Whisk together CHILI POWDER, GARLIC POWDER, SALT, and PEPPER in a mixing bowl. Season the pork shoulder to coat all sides evenly.

  • Searing (optional step): Heat OIL in a large skillet on medium-high heat. Sear the pork shoulder for 1-2 minutes on each side until browned. Transfer pork out of the skillet. Deglaze the pan with a splash of broth and add this to the slow cooker.

  • Slow cook the pork: Place pork shoulder in the slow cooker with the CHICKEN BROTH. Cover the cooker and set it on LOW for 6-8 hours.

  • Knowing when it's done: Pork shoulder will fall apart easily and register a minimum internal temperature of 200 degrees Fahrenheit.

  • Serving: You can shred it into pulled pork right in the slow cooker or transfer it to a serving platter, shred it, and ladle juices over it.

    Serve pulled pork over sandwich buns with your favorite toppings or as an entree with your favorite sides.

  • Storing: Cool the pork completely and refrigerate in an airtight container for up to 5 days or 30 days in the freezer (or longer if vacuum sealed).
